Chorizo Quiche

This dish is just what you need for a cold morning because the spicy chorizo helps warm up everyone’s bellies! This is an easy dish because there is no crust which makes it quick to make. My favorite element is the tender diced peppers because they take on the spice from the chorizo.

Ingredients

9 farm fresh eggs

1/2 cup milk

1/2 cup cheddar cheese, grated

1 package pork chorizo

1/2 yellow onion, diced

1 bundle green onions, diced

1 red pepper, diced into 1/2 inch chunks

1 teaspoon dried cilantro

Salt and Pepper to taste

Directions

Preheat oven to 350°F. In a medium mixing bowl combine eggs, milk, green onions, cheese, cilantro, salt and pepper. Grease a medium bakeware pan and set aside.

In a medium skillet cook chorizo on low/medium heat for 5 – 8 minutes. Add in diced onion and red pepper. Cook for another 5 minutes. Add to the egg mixture to medium bowl and stir everything together. Pour this mixture into greased bakeware and place in the oven.

Cook for 35 minutes, slice into pieces and enjoy 🙂
