Elk Tacos topped with Butter Braised Radishes

These elk tacos have a two fun twists; the first twist is topping the tacos with butter braised radishes and the second is making homemade tortillas with garbanzo flour. I hope you enjoy creating and eating these tasty elk tacos 🙂


1 pound elk hamburger, browned

1 ½ cups all purpose flour

½ cup garbanzo flour

3 tablespoons olive oil

¾ cup water

2 tablespoons butter

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon freshly ground pepper

7 medium radishes, quartered

6 medium radish greens, chopped

2 tablespoons cilantro, chopped


Homemade tortillas

In a large bowl combine flours and salt. Stir in water and oil. Turn onto a floured surface and knead a dozen times. Add flour and water as needed to achieve smooth dough. Let rest for 10 minutes.

Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 6 – 7 inch circle.

In a large nonstick skillet, coat with cooking spray and cook each tortilla over medium heat for 1 minute on each side or until lightly brown. Remember to reapply cooking spray for each side of the tortilla. Keep warm.

Elk burger and butter-braised radishes

Add the elk hamburger and ½ teaspoon garlic powder to a large skillet and cook until browned, about 8- 10 minutes.

Remove and place in bowl and keep warm.

Add the butter, quartered radishes and chopped radish greens to the same skillet used to brown the meat and cook on medium heat for 6-8 minutes and remove from heat.

Plate tortillas and add cooked elk burger, followed by a generous layer of butter-braised radishes and top with cilantro.


In place of elk hamburger you may use ground beef.

In place of homemade tortillas you may use packaged tortillas.
